This heats so evenly and cleans so easily! I love the large pot with single handle and it goes from stove top to oven ! Much lighter than my cast iron when making soups and casseroles. You will use this ALL THE TIME!
I will not, however, be deterred from telling you how impressed I am with the pot. Here goes.
I have been making the bagna for our holiday gatherings for more than 35 years and thought I had pretty much perfected the process and that a different pan would not make a difference, but I was wrong. My bagna cauda thickened much faster than usual, so it took less time to cook. This is a big plus for me, since I usually have to make the bagna after work. I was worried that the pot handle would get hot, but, as you already know, there was no change in temperature at all, even the sides of the pan were cool enough to touch. When the bagna cauda was heated through, I got rid of the other pot, put the lid on and let it sit. It stayed warm for quite a while. Thanks so much!
